San Mai – Literally “Three Layers”
San Mai is a blade forging technique that originates from Japan. In the case of laminated blades with a core of carbon steel and sides made of stainless steel, it offers a very practical combination. The carbon steel core provides exceptional sharpness and ease of sharpening but tends to rust. Meanwhile, the outer layers of stainless steel protect the blade from corrosion, making maintenance much easier.
As a result, the user receives a knife that combines the sharpness and excellent cutting properties of carbon steel with the convenience and rust resistance of stainless steel.
